Electric Redux
Memorial Day weekend was BBQ time by law, so out comes the electric enigma for another go. This time was pork ribs... low and slow (in theory, anyway). I didn't look forward to lotsa time out in the sun, no matter how good the ribs would taste. After I clamped down on the socket real good with my Robo Grips (Thanks, Craftsman), I noticed the element was touching the bottom reflector pan. Moving it up to give a 3/4 inch space put me in business. I only had to use medium setting to get ideal heat all afternoon. The soaked hickory and mesquite slowly smoldered next to my lump charcoal, and at suppertime, I had the best ribs I ever made yet.
Heck, I even used Kingsford the next day to grill steaks and veggie kebabs.
Sweeeeeeeet.
